There's nothing in the world like a Scandinavian open-faced shrimp sandwich. The benefits of the Scandinavian tradition of serving the bread under a generous sized slab of meat or sea food are so obvious. Less bread and more mayo for one and other than that, the more of the condiment you put on, the more civilized people will eat - Did you ever see anyone try to eat a Scandinavian shrimp sandwich without utensils. No, open-faced is the way to go, the way to eat slower and more civilized, with a knife and fork.
