The strongest food trends in recent years have not been about the exclusive but the forgotten foods. Cabbages, especially kale, have been trendy lately, so it’s no surprise that cauliflower is in the hotspot now. 2015 is poised to be the year of the cauliflower.
Cooks appreciate its versatility — at the Nobel Banquet it played a leading role as the main ingredient in the soup that was served with king crab. It also makes a tasty, beautiful garnish.
Tommy Myllymäki, a popular Swedish television chef often turns to cauliflower for the magic of a recipe, especially whole, roasted cauliflower with capers, sage and huge amounts of butter. Pinterest, too, shows evidence of its growing popularity, confirming on social media that this veggie is a trend even before 2015. In addition to looking good in photographs, cauliflower is wholesome and healthy, inexpensive and useful.
