In preparation for Christmas, many Scandinavians turn to the tradition “7 types of cookies” in their preparation. In this demonstration class, Sun Street Bread’s Solveig Tofte, will guide us through this process – Norwegian style! She will demonstrate some classics like Krumkake, Kransekake, and Pepperkake. She offer have a couple twists on Fattigman (no pun intended) and Rosettes, and then demonstrated make a couple of very special cookies called Vepsebol and Kongeboller. This class is demonstration style.

Solveig Tofte owns the award-winning Sun Street Breads in Minneapolis. She has been baking for over 15 years and has a keen interest in resurrecting the foods of her family’s immigrant history. She teaches classes all over the country and is back this Christmas at ASI.
